介紹：

支鏈淀粉白色粉狀，又稱膠淀粉。支鏈淀粉是以優(yōu)質(zhì)糯玉米為原料生產(chǎn)的一種純天然支鏈淀粉。與普通淀粉相比具有較高的膨脹性、粘滯性和透明度，其膨脹性是普通淀粉的２·７倍。普通淀粉溶液很不穩(wěn)定，貯存時(shí)逐漸變成混濁，膠粘性降低，*后出現(xiàn)白色結(jié)晶沉淀。而支鏈淀粉很容易溶于水生成穩(wěn)定的溶液，且具有很強(qiáng)的粘度，不易發(fā)生老化，淀粉液在貯存過程中，不發(fā)生沉淀。支鏈淀粉是一個(gè)具有樹枝形分支結(jié)構(gòu)的多糖。相對分子質(zhì)量較大，一般由1000－300,000個(gè)左右葡萄糖單位組成，分子量約為100萬，有些可達(dá)600萬。D－吡喃葡萄糖單位通過α－1,4－苷鍵連接成一直鏈，此直鏈上又可通過α－1,6－苷鍵形成側(cè)鏈，在側(cè)鏈上又會出現(xiàn)另一個(gè)分支側(cè)鏈。主鏈中每隔6－9個(gè)葡萄糖殘基就有一個(gè)分支，每一個(gè)支鏈平均含有約15－18個(gè)葡萄糖殘基，平均每24－30個(gè)葡萄糖殘基中就有一個(gè)非還原尾基。因此支鏈淀粉的結(jié)構(gòu)為高支化聚合物，十分復(fù)雜。"
